This is a perfect texture pasta to be made with a Kitchenaid stand mixer.
150g All Purpose flour
50g Semolina flour (I use Bob's Red Mill brand)
124g eggs, EVOO, water (2 eggs and if they're less than 124g, add equal parts EVOO and water for 124g total)
3g kosher salt
1.) Mix everything with paddle 30 seconds on speed 2.
2.) Knead with dough hook 2 mins on speed 2.
3.) Knead by hand 30-60 seconds.
4.) Wrap in cling film and rest 30+ minutes.
